Fruit flies are in full force.
The best way to protect your wine, beer and mash from contamination is to create barriers.
Stretch a plastic bag over the top of your pail.
Check the level of sulphite solution in your airlocks, the water level should come up the side of the little thimble inside, but still allow the thimble to move up and down freely.
Prevention is far easier than trying to fix it after the fact!
